Mead is an alcohol based drink which is made from honey. The honey is mixed with warm water to make it dissolve, then it is mixed with a paddle and motor so it can ferment and the sugars can be digested by the yeast. Yeast is then added to this mixture to allow fermentation to occur and for alcohol to be produced. the mixture is then monitored and left for around four months, although some may be left longer in order to develop flavours and certain notes. The density of this mixture will decrease. overtime due to the decreasing sugar levels and once it reaches zero, it is chilled at 4 degrees and is transferred to a conditioning tank. The mead is then processed by either small amounts of chemicals, filtering or pasturing to remove any excess sugars and to stabilise the mead.
