Brooke's Dairy
Brooke's Dairy is a family run business and has been running since 1991, it started by making ice cream, later expanding to cheese making in 2017 and moving onto the current site based just outside Tintern in 2019. They specialise in three cheeses, Angiddy, Blue Wenalt and Fedw, all named after attractions within the local area. Brooke's Dairy stocks in many small businesses and regional chain supermarkets, such as Waitrose and Morrisons in places such as Abergavenny and Monmouth.
Brooke's Dairy has around 100 Jersey cows which are milked twice a day, with a constant supply of calfs and replacements. All cows are on site and are milked on site to ensure freshness. The milk is then processed and the curds are collected and stored. The curds are then salted a day later and placed into moulds until it sets and then it is placed in a cooling room. The cheese ferments for 5-6 days in cold conditions with a high humidity before the mould surrounding the cheese starts to grow and bloom around the outside.
Brooke's Dairy believes you should shop local because it encourages education about the local area and the local economy will be benefitted from more people shopping locally and using more local resources and therefore helps develop the local supply chain. Everything that is produced at Brooke's Dairy is produced on site, the cows are jersey cows and therefore have a higher butter fat content, leading to the milk being more creamy and therefore tastes nicer to the general audience. The nomenclature within the cheese names shows off the local area and how important local attractions are to the people who live in or near Tintern. Local schools and leadership programs also come in and visit the farm, therefore expanding children's knowledge on production and farming as a whole, enriching the local community.
