Creamy, unpasteurised cheese which has a mellow tang and pressed texture. This cheese is made over two days, using a third of the curd from each day of cheesemaking. It is then slowly smoked over wild hickory branches, resulting in a creamy, crumbly texture with a rich, tangy, and smoky flavour.
